I have tried several carrot cake recipes and this is the one that I like to make the best, when it comes to carrot cakes you almost have to go with the homemade variety, the box versions don't taste near as good as making it from scratch.
Mix the eggs, sugar and oil together. Then after you have sifted the dry ingredients add them as well and beat the batter. Then gradually add in your carrots.
Bake in a 13 x 9 inch pan for 1 hour at 350 degrees.
Beat it all together and then frost your cooled cake with it.
