Chicken Jambalaya

How To Make:

Ingredients:

4 cups Oil
5 lbs. Uncooked rice
15 lbs. Hen (cut)
5 lbs. Onion (chopped fine)
5 stalks Green onions (chopped fine)
2 tbs. Minced garlic
15 cups Water
Salt
Black Pepper

Directions:

In a 5 gallon cast iron pot, heat oil and add hen. Fry until golden brown, remove and set aside.

Remove all grease from pot.

Add onions with a small amount of water and cook until golden brown. If onions start to stick, add small amount of water. Be careful not to burn onions.

When onions are cooked, add hen, water, garlic, salt, pepper, and green onions. Bring to a boil and stir so as not to stick. When the water is almost cooked out, lower fire and cover.

Cook approximately 15 minutes. Remove lid and turn rice over. Do not stir!

Replace lid and cook approximately 45 minutes. Remove lid and turn over. Taste rice. If not cooked, replace cover and cook until rice is tender and fluffy.
