One of my most favorite recipes is my sister-in-laws recipe for saucy meatballs. I just love this recipe and try to wrangle a dinner invitation anytime she is making it.
1 pound hamburger
1/2 cup bread crumbs
1/4 cup milk
2 tablespoons onion
1 teaspoon salt
1/2 teaspoon of Worcestershire sauce
1 egg
Mix all the meatball ingredients together and bake at 400 for 20 minutes. (I use this meatball recipe any time I need meatballs - they are very good and hold together well)
1 can cream of chicken soup
1/3 cup milk
1/8 teaspoon nutmeg
1/2 cup sour cream
Rice to serve it over
In a large saucepan mix your soup, milk, and nutmeg together. Add your cooked meatballs and heat to boil. Cover and reduce heat simmering for 15 minutes. Then add 1/2 cup of sour cream and heat for another minute or two. Serve over white rice.
I suppose you could call this a casserole but with its spicy ingredients it isn't what I normally think of when it comes to casseroles. You can make this as spicy as you like it by varying between mild and hot salsa and peppers. This recipe is a favorite for our family get togethers and we all enjoy it a lot.
I can remember my mom making this quite a bit when I was growing up. I was a bit of a picky eater but even I would go back for more porcupines. I liked it best when she made it with homemade rolls and a big garden salad. I find myself making it quite often for my own family.
Delicious that is the only way to describe supper when my sister-in-law makes runzas for the family.
