I use this as a base recipe for my meatloafs and I vary it with other ingredients and spices.
2 eggs
1/4 cup of ketchup
2 pounds of lean ground beef
1 cup of breadcrumbs
1/8 cup of oatmeal
salt and pepper to taste
I bake it in a meatloaf pan with small holes in the bottom. I place the pan on a rack with something underneath to catch the fat. Bake at 350 for 1 - 1 1/2 hours.
Chopped onions or an onion soup mix. If you use a soup mix add some water to it and mix it up before adding to the rest of the ingredients.
1/2 cup of tomatoe juice or red wine.
3/4 cup of shredded cheese.
Chopped mushrooms. I like portabello best.
Shredded carrots and/or potatoes.
Frozen mixed vegetables. Or a can of vegetable soup.
Jalapenos and green chilis.
Stewed tomatoes.
To make a fancier meal with more eye appeal when the meatloaf is done spread mashed potatoes on the top, sprinkle cheese over it all and put back in the oven until the cheese is melted.
Casseroles are great but you don't always have the time to get it all ready for the oven and bake it too. When we are short on time and I want to make something the whole family really likes I rely on my old Goop recipe.
This recipe for saucy meatballs is oh so good. It is one of my all time favorite recipes and meals.
I can remember my mom making this quite a bit when I was growing up. I was a bit of a picky eater but even I would go back for more porcupines. I liked it best when she made it with homemade rolls and a big garden salad. I find myself making it quite often for my own family.
I love quick meal recipes that I can just throw together and not take a lot of time in preparation. This round steak recipe is quick and tastes super.
