Great flavor -- simple pasta sauce.

I learned how to cook from my good friend Joan Hoien. Wolfgang Puck's last cookbook is dedicated to Joan. I thank Joan for giving me lessons and teaching me how to experiment with different ingredients.

My motto is, if dinner doesn't turn out, you send out for Pizza! My guests all know this is the rule at our house because I am always trying new recipes.

Enjoy, and come back for some more tips. Everyone can learn to cook, the trick is to keep it simple, I have learned a lot since my first dinner party. (I thought to make the gravy brown, you added brown sugar.) What a dinner party that was...I didn't think of ordering out for Pizza then!

Ingredients:

  • 1 package prepared ravioli (cooked al dente).
  • 8 medium tomatoes chopped. Seed and peel, but not necessary.
  • 6 cloves fresh garlic minced
  • 2 tablespoons Olive Oil
  • 1/4 Cup red wine (optional)
  • 1 teaspoon salt
  • 1 teaspoon Black Pepper
  • 6 fresh Basil leaves chopped
  • 1-teaspoon red pepper flakes (optional)
  • Fresh Parmesan cheese. Not the cheese in the can!

Directions:

Bring large pot of salted water to a boil keep simmering. In a small skillet, over medium heat, put 2 Tablespoons of olive oil. Add the garlic and watch closely, garlic burns fast.

Add chopped tomatoes and optional red wine.

Add the red pepper flakes only if you like it spicy. Bring to a boil and simmer until it reduces to a thicker consistency, your preference on consistency, if the sauce gets too thick add a little more wine or water.

Add 6 Fresh chopped basil leaves. Season with salt and pepper to taste, keep warm.

Bring the simmering water back to a boil and add the ravioli to the boiling water cook until it floats and then remove it with a slotted spoon or strainer.

Do not drain the pasta.

Top the ravioli with the sauce and grate fresh Parmesan on top.

Serve with a salad and crusty bread. Serves two.
