Okay tuna was on sale the other day and both my husband and I stocked up. Then my grandma stopped by with some because she had seen the sale too. Now I have a ton of tuna, way more than we can use for just sandwiches. Anyone have any inspiring recipes that use canned tuna?
My neighbor has made this a couple times and sent it over, I enjoy it. I have not actually made it myself yet but she gave me the recipe so I could.
1 package (about 5 ounces) scalloped potatoes
1 med to large onion that you have sliced fairly thin
3 tablespoons margarine
3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/4 cups milk
2 7 ounce cans dried and flaked tuna
1/2 cup mayo
1/2 - 3/4 cup grated cheddar cheese
1/2 teaspoon hot pepper sauce
1 teaspoon prepared mustard
Mix the potatoes like the package says, add the extra ingredients, put in a casserole and bake it for 25 minutes or so.
I make tuna and cauliflower casserole and freeze it to use later. Here is how I do it.
20 ounces of frozen cauliflower
1 cup chopped onion
2 tablespoons water
2 (11-oz.) cans condensed cheddar cheese soup
1 small can sliced drained mushrooms
1/2 cup milk
1 teaspoon Worc. sauce
1/4 teaspoon cayenne pepper, more or less to taste
2 7 ounce cans tuna
Directions:
Cook your cauliflower and then drain, chop, and set aside.
Cook your onions in a covered saucepan and then add all the ingredients except the cauliflower and tuna. Fold in the cauliflower and tuna and put it into to casseroles. Cover them tightly and freeze them.
When I am ready to cook them I do it while they are still frozen. I cook it covered for an hour at 400 and then take off the lid and bake for about 20 more minutes.
