My daughters both love lemon and coconut desserts. Does anyone have some recipes they can share that combine the two flavors?
Lemon and coconut do taste good together. I make these once in awhile and I think they are good.
Here is what you need.
For the Botton Crust:
1/2 cup softened margarine
1/2 cup brown sugar
1-1/2 cups flour
For the Top:
3 eggs, separated
1 cup sugar
1/3 cup lemon juice
2 Tablespoons grated lemon rind
2 Tablespoons flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 cups shredded coconut
Mix the first 3 ingredients together until it is crumbly and then press it down firmly into the bottom of a 13 x 9 pan. Bake at 325 for 10 to 15 minutes. Edges will get slightly brown.
Then combine the egg yolks, 1/2 cup of the sugar, lemon juice and rind, baking powder, and salt. Stir in coconut. In another bowl beat egg whites with remaining sugar until stiff peaks form then gently add it to your already mixed ingredients. Then spread it over the bottom crust.
Bake it for 20 to 25 more minutes and then let it cool and serve!!
When it comes to a brownie recipe you just can't top my recipe for caramel ribbon brownies. They are so good you will find yourself making them over and over again. They are really really easy to make too.

I love to make homemade apple pie but unless I buy ready made pie crusts the crusts don't seem to turn out right. We have an apple tree so I have tons of apples in the freezer but not always a pie crust. Can someone help me to learn how to make a good crust that turns out at least most of the time?

I have been to bake sales and gotten these brownies before and they are delicious. I even ask for the recipe sometimes but the people working are never the ones that made that particular recipe. I would love to make them at home because I know they have to taste even better warm from the oven!!
