I need big time help here. I need to find a bunch of casserole recipes that I can make up ahead of time and freeze for my own family and for my parents who live a couple hours away. Please include thawing and cooking instructions. This busy mom and daughter will be extremely grateful for any help she can get.
There is a tuna casserole mentioned in the seafood recipe section that can be frozen. I am going to try that one soon, it looks pretty good.
I make this beef and potato casserole quite often.
1 pound or a little more of hamburger
1/2 cup chopped onion
3 large sliced potatoes, sliced
2 shredded carrots
1 can cream of mushroom soup
1 cup shredded Cheddar cheese
salt and pepper to taste
I brown my beef and onions and drain off the fat. I then put it in my casserole dish. Then layor on the potatoes and sprinkle with salt and pepper. Then I shred my carrots over that and add the soup. I bake it for about 45 - 50 minutes at 350. Then I add the cheese to the top and bake it for about 5 more minutes.
So if you are going to freeze this you will want to hold off on the cheese and just have it on hand.
