This area is jam packed with great things to see and do. You have to visit the National Tropical Botanical Garden. It is truly a sight to behold all those colorful flowers and plants mixed in with the ancient Hawaiian stone walls.
You should also see the Japanese garden and legend stones at Kukuiolono Park. You will love the panoramic view of kauai from there as well.
Visit Maha'ulepa beach and look for petroglyphs as you stroll in the sand.
For anyone that enjoys snorkeling or scuba diving I definitely recommend Poipu Beach Park. You will love the experience.
Take some time and go beachcombing on Shipwreck Beach, which is no longer as private as it used to be but still worth it.
And a favorite place of mine is Spouting Horn. I love the noise you hear as the surf forces water into a lava tube and as it "spouts" water in the air.
You also may want to consider visiting Prince Kuhio Park and the Koloa History Center if you have the time.
