Many people travel right on through coconut coast and miss some great thinks on the island of Kauai.
I totally recommend taking a picnic or hike when you are at the Keehua Forestry Arboretum. You can swim in the many pools, watch lots of fish in the streams, and hike among the many monkeypod, mango, and eucalyptus trees.
There are many roadside shops where you should stop and try some of the native Hawaiian food or wares.
Opaekaa Falls is also something to see, while you are enjoying the majestic falls you will also have a great view of the Wailua River.
You should also watch the mountains carefully and look for the sleeping giant. The people of Kauai tricked the giant and he has been "fast asleep" for many years.
Other things you might find interesting in the area are Poliahu Heiau, the archeological sites located in Wailua River State Park, Holo-holo-ku Heiau, and of course Bell Stone.
