Starting off you will want to of course watch a beautiful sunset over the ocean. You can get a great view from Kekaha Beach Park but since this beach is open to the ocean you need to be cautious.
If you have small children you may want to consider watching the sunset from Salt Pond Beach. You can even find a nice toddler's bathing pool there as well as many other tidal pools.
Of course Waimea Canyon is a must see as well. Make sure when you drive to view Waimea Canyon you continue on up to Kalalau lookout. This site is a "wow", you won't believe how colorful it is.
Stop by the Kokee Natural History Museum you can pick up some hiking information and maps while you are there too.
Definitely see for yourself Hanapepe Valley, it may look familiar if you have seen Jurassic Park.
Other places of interest relating to culture and history that are worth visiting are Polihale Heiau, Captain Cook's Monument, and the Russian Fort Elizabeth.
